  • 500 g 500g all-purpose flour
  • 375 g 375g warm water, divided 1 1/2 cups plus 2 tbsp
  • 1 g 1g active dry yeast 1/4 tsp
  • 10 g 10g fine salt 1 1/2 tsp

Preparation

  • Mix flour and all but 1 tablespoon of the water in a large bowl until just combined. Cover and let rest for 20 minutes.
  • Dissolve yeast in the remaining warm water and add salt over the surface of the dough.
  • Stir yeast mixture into the dough, folding it until a shaggy mixture is formed. Cover and let it rest for about an hour.
  • Fold the dough to develop gluten, then shape it into a ball and let it rise until doubled in volume, about 5-6 hours.
  • Cut the dough in half, shape each piece into a ball, and let rest at room temperature for about an hour.
  • Preheat the oven and prepare to use the dough or refrigerate for later use.
