  • 2 slices cooked and chopped bacon Use your favorite type of bacon.
  • 2 large eggs Fresh eggs recommended.
  • 1/3 cup shredded cheddar cheese Can substitute with other cheeses.
  • 1 piece 8-inch flour tortilla
  • 1 teaspoon butter Optional, for extra flavor.
  • to taste Salt and pepper For seasoning.

Preparation

  • In a pan over medium heat, melt the butter if using.
  • Crack the eggs into the pan, adding a pinch of salt and pepper. Scramble them until fully cooked.
  • Place the flour tortilla in the same pan, warming it slightly.

Assembly and Cooking

  • Layer the scrambled eggs, chopped bacon, and shredded cheddar on one half of the tortilla.
  • Fold the tortilla over to cover the filling.
  • Cook for another 2-3 minutes, or until the quesadilla is golden brown and the cheese is melted.
  • Remove from heat and let it cool slightly before slicing into wedges.

Notes

Serve with fresh herbs, salsa, or avocado. For extra flavor, add spices like paprika. Can be customized with veggies.
