Preparation

  • Cook jasmine rice according to package instructions.
  • In a bowl, mix mayonnaise, sriracha, honey, and soy sauce to make the spicy mayo drizzle.

Cooking

  • In a skillet, heat some oil over medium heat.
  • Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
  • In the last few minutes of cooking, add the mixed vegetables to the skillet and stir until warmed.

Assembly

  • To assemble the bowls, serve cooked chicken and veggies over jasmine rice.
  • Drizzle with spicy mayo and garnish with chopped green onions.
  • Serve immediately.
