  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned
  • 3 medium green onions, chopped
  • 2 tablespoons oil (for cooking)
  • 1 tablespoon sesame seeds (for garnishing)

Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions
 

Preparation

  • Start by cooking your rice according to package directions. Set aside.
  • In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, soy sauce, salt, and pepper to create the Bang Bang sauce.

Cooking

  • Heat oil in a skillet over medium heat, then add diced chicken breasts. Cook until they are golden brown and reach an internal temperature of 165°F. Remove from heat.
  • In the same skillet, add broccoli, red bell pepper, and carrot. Sauté until just tender.
  • Combine the cooked chicken and vegetables, then toss them in the Bang Bang sauce until evenly coated.

Serving

  • Serve the chicken and vegetable mix over rice, garnishing with chopped green onions and sesame seeds.

Notes

For added flavor, marinate the chicken in the sauce before cooking. Customize with your favorite veggies such as snap peas or bell peppers. Serve with lime wedges on the side for an extra zesty kick!
