  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon Can swap for sausage if desired
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract Use twice if mentioned in the instructions
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract See note for adjustment in total
  • 1 pinch fine salt

Instructions
 

Preparation

  • In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.
  • In a bowl, mix the cream cheese, maple syrup, bourbon, and a pinch of salt until smooth. Stir in the crispy bacon pieces.

Cooking

  • In another bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
  • Spread the cream cheese mix onto four slices of bread and top with the remaining four slices to create sandwiches.
  • In the same skillet, melt butter over medium heat.
  • Dip each sandwich in the egg mixture, allowing it to soak briefly. Cook in the skillet until golden brown on both sides, about 3-4 minutes per side.
  • Drizzle with extra maple syrup if desired.

Notes

Presentation: Slice the stuffed toast diagonally and arrange on a plate. Serve with fresh fruit or whipped cream for added flair. Pair with coffee, orange juice, or even a mimosa to elevate your brunch.
