  • 6 large large eggs
  • 4 large flour tortillas
  • 0.5 cup sour cream
  • 1 cup diced bell peppers and onions
  • 1 cup cooked sausage or bacon (chopped)
  • to taste hot sauce

Instructions
 

Preparation

  • Crack the eggs into a bowl and whisk together with salt and pepper until fully blended.
  • Chop the cooked sausage or bacon into small pieces.
  • Chop the bell peppers and onions into small uniform pieces.

Cooking

  • In a non-stick skillet over medium heat, scramble the eggs for about 5-7 minutes until fluffy and fully cooked.
  • In the same skillet, add oil if needed and sauté the diced bell peppers and onions for 3-4 minutes until softened and slightly charred.
  • Mix in the chopped sausage or bacon with the eggs and veggies in the skillet, stirring gently for 1-2 minutes to combine.
  • On a flat surface, lay out a tortilla and spoon the egg mixture into the center, leaving space around the edges. Top with sour cream and hot sauce.
  • Fold the sides of the tortilla towards the center and roll it from the bottom up to create a tight seal.
  • Toast the wrapped crunchwrap in the same skillet over medium heat, seam-side down, for 2-3 minutes on each side until golden and crispy.

Serving

  • Remove from heat, slice the crunchwrap in half, and serve hot with extra hot sauce if desired.

Notes

Feel free to customize the filling with different proteins or add cheese for extra creaminess.
