  • 1 to 2 tablespoons butter
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 1/4 cup cornstarch
  • 1 cup milk

Vegetables

  • 2 large potatoes, peeled and chopped into 1/2 inch cubes
  • 16 ounces broccoli florets (fresh or frozen)

Seasoning

  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Cheese

  • 1 1/2 cups shredded sharp cheddar cheese

Preparation

  • In a large pot, melt the butter over medium heat.
  • Add diced onion and carrots, sautĂ© for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for another minute.

Cooking

  • Pour in the chicken stock, then add the chopped potatoes. Bring to a boil and let simmer for about 15 minutes until potatoes are tender.
  • In a small bowl, mix the cornstarch with milk until smooth. Slowly add this mixture to the pot, stirring continuously.
  • Add the broccoli florets, salt, and pepper. Cook for another 5-7 minutes until the broccoli is tender and the soup thickens.
  • Remove from heat and stir in the shredded cheddar cheese until melted and smooth.

Notes

Serve in colorful bowls paired with crusty bread or a fresh salad. Adjust serving sizes based on guests’ appetites. For a unique twist, consider enhancing the flavor with a dash of nutmeg or crushed red pepper flakes.
