  • 1 can white beans (like cannellini or great northern) Rinsed and drained.
  • 1/2 cup buffalo sauce Use your favorite brand.
  • 8 small corn or flour tortillas Warm them before use.

Fresh Toppings

  • 1 avocado (sliced) Adds creaminess.
  • 1 cup shredded lettuce For crunch.
  • 1/2 cup diced tomatoes Fresh and juicy.
  • 1/4 cup diced red onion Adds sharpness.

Instructions
 

Preparation

  • Heat a medium skillet over medium heat.
  • Add the rinsed white beans and buffalo sauce to the skillet and cook for about 5 minutes, stirring occasionally until heated through and slightly thickened.
  • While the beans are cooking, warm the tortillas in a dry skillet over medium heat for 30 seconds on each side or wrap them in foil and heat in the oven.
  • Spread a scoop of the buffalo white bean mixture onto each tortilla, leaving space at the edges for folding.

Assembly

  • Top each taco with sliced avocado, shredded lettuce, diced tomatoes, and onion.
  • Sprinkle cilantro over the tacos if using, and serve with lime wedges on the side.

Notes
