  • 12 oz penne or rotini pasta
  • 2 breasts chicken, cubed Fresh is best for flavor.
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced onion, red bell pepper, and garlic, sautéing until softened.
  • Add the cubed chicken and Cajun seasoning, cooking until the chicken is browned and cooked through.
  • Stir in the softened cream cheese, heavy cream, and chicken broth until smooth.
  • Combine the cooked pasta with the sauce and mix well.

Baking

  • Transfer the mixture to a baking dish and top with shredded cheddar and Parmesan cheese, along with paprika.
  • Bake for 20-25 minutes or until the cheese is bubbly and golden.
  • Garnish with chopped parsley before serving.

Notes

Feel free to customize by swapping chicken with shrimp or sausage. Ideal for serving with garlic bread or a fresh salad.
