  • 1 lb Andouille sausage Diced
  • 3 cups Potatoes Diced
  • 2 cups Mixed vegetables Such as carrots, celery, and bell peppers
  • 2 tbsp Cajun spice blend To taste
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese Shredded
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Chicken broth Low sodium recommended

Instructions
 

Preparation

  • In a large pot, cook diced andouille sausage until browned.
  • Add chopped onions, garlic, and mixed vegetables, cooking until softened.

Cooking

  • Stir in diced potatoes and Cajun spice blend.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and let simmer until potatoes are tender.
  • Stir in heavy cream and cheddar cheese until melted.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with green onions if desired.

Notes
