  • 4 pieces burrito-size flour tortillas
  • 2 cups shredded chicken Use freshly cooked or rotisserie chicken for convenience.
  • 1 packet taco seasoning
  • 1 cup sour cream Can substitute with Greek yogurt for a healthier option.
  • 1 cup shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 can diced tomatoes with green chilies
  • 16 oz Queso Blanco Velveeta Melted cheese for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the shredded chicken, taco seasoning, sour cream, green chilies, diced tomatoes, and half of the cheddar cheese.
  • Place a tortilla on a flat surface and fill it with the chicken mixture. Roll it up tightly and place it seam-side down in a baking dish.
  • Repeat until all tortillas are filled and placed in the dish.

Baking

  • Pour the melted Velveeta cheese over the rolled enchiladas, covering them completely.
  • Sprinkle the remaining cheddar cheese on top.
  • Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let cool for a few minutes before serving.

Notes

Garnish with fresh cilantro or chopped green onions for added flavor and color. Pair with rice or a salad for a complete meal.
