Ingredients
  

Potato Base

  • 2 pounds russet potatoes, peeled and small diced For a vibrant flavor base.
  • 3-4 tablespoons oil For tossing the potatoes.
  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Meat Mixture

  • 1 pound ground beef
  • 1 packet taco seasoning
  • as directed Water As directed on taco seasoning packet.

Toppings

  • 1 8-ounce bag Mexican shredded cheese For topping.
  • Optional toppings: pico de gallo, guacamole, sour cream Customize as desired.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the diced potatoes with oil, salt, pepper, garlic powder, and onion powder until evenly coated.
  • Spread the seasoned potatoes on a baking sheet in a single layer. Bake for 25-30 minutes, or until golden and tender, stirring halfway through.

Cooking

  • Meanwhile, in a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the taco seasoning and water to the beef, mixing well. Let it simmer for a few minutes until thickened.
  • When potatoes are done, mix them with the seasoned beef in a large baking dish. Top with the shredded cheese.
  • Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted.

Notes

Serve with fresh pico de gallo, guacamole, or sour cream for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
