Ingredients
  

Main Protein

  • 4 pieces boneless, skinless chicken breasts Trimmed and at room temperature for better searing.

Liquids/Dairy

  • 1 cup heavy cream Bring to room temperature to avoid curdling.
  • 1 cup chicken broth

Aromatics & Vegetables

  • 1 cup sliced mushrooms Cook until golden for optimal flavor.
  • 2 cloves garlic Minced for flavor depth.
  • 1/2 cup sun-dried tomatoes Chopped into bite-sized pieces.

Cheese

  • 1/2 cup Parmesan cheese, grated Layer at the end for melting.

Oils & Seasonings

  • 2 tablespoons olive oil For searing the chicken.
  • to taste salt and pepper For seasoning.

Instructions
 

Sear the Chicken

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and season with salt and pepper. Sear for about 5-6 minutes until golden brown on one side. Flip and sear for another 4-5 minutes until cooked through.

Remove the Chicken

  • Once cooked, remove the chicken from the skillet and set it aside on a plate. Cover it with foil to keep warm while you prepare the sauce.

Sauté Aromatics

  • In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until mushrooms are browned.

Make the Sauce

  • Pour in 1 cup of chicken broth and 1 cup of heavy cream into the skillet. Stir to combine and bring to a gentle simmer. Cook for about 5 minutes until slightly thickened.

Add Finishing Touches

  • Stir in the sun-dried tomatoes and grated Parmesan cheese, mixing well. Return the chicken to the skillet, ensuring it’s nicely coated in the sauce, and cook for an additional 2-3 minutes to heat through.

Serve Hot

  • Plate the chicken, drizzling extra sauce over the top for a beautiful presentation.

Notes
