  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Cooking

  • In a large pot, heat a little oil over medium heat.
  • Add chopped onion and minced garlic, cooking until softened.
  • Add the chicken breast and cook until lightly browned.
  • Stir in black beans, corn, diced tomatoes, and taco seasoning.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and let simmer for 20 minutes, until the chicken is cooked through.
  • Shred the chicken in the pot using two forks, combining everything well.
