  • 2.5 lbs Yukon Gold potatoes, peeled and cut into chunks Consider alternatives like Russet or red potatoes.
  • 4 slices bacon, diced (optional) Cook until crispy, drain excess fat.
  • 3 cups finely chopped green cabbage or kale Alternatives can include spinach or collard greens.
  • 0.5 cup whole milk or cream, warmed Can substitute with almond milk or low-fat milk.
  • 6 tablespoons butter, divided (plus more for serving) Use unsalted butter for better salt control.
  • 2 pieces green onions, thinly sliced Chives can be used as an alternative.
  • to taste salt Adjust seasoning after mashing.
  • to taste freshly cracked black pepper For added flavor.

Instructions
 

Preparation

  • Place Yukon Gold potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes or until fork-tender.
  • While the potatoes are cooking, cook the diced bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and set aside on paper towels to drain excess grease.
  • In the same skillet with the bacon drippings, add chopped cabbage or kale. Sauté for around 5 minutes until wilted and tender.

Mashing and Combining

  • Once the potatoes are fork-tender, drain them and return them to the pot.
  • Add warmed milk or cream and 4 tablespoons of butter. Mash until smooth and creamy.
  • Add sautéed greens and cooked bacon (if using) into the mashed potatoes. Season with salt and freshly cracked black pepper. Stir gently to combine.
  • If the potatoes are too thick, add more warm milk or cream to achieve the desired consistency.

Serving

  • Transfer the mixture to a serving bowl and dot with remaining butter. Garnish with thinly sliced green onions.

Notes

Enhance the flavor with garlic sautéed in bacon drippings. Customize with cheeses or spices. Serve with crusty bread for soaking up creamy goodness.
