Ingredients
  

For the toast

  • 2 slices Whole grain bread Toast until golden brown.

For the toppings

  • 1 cup Cottage cheese Generously spread on toast.
  • 2 large Eggs Soft-boil and peel.
  • to taste Sriracha sauce Drizzle over eggs.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.

Instructions
 

Preparation

  • Toast slices of whole grain bread until golden brown.
  • Soft-boil the eggs and peel them.

Assembly

  • Spread a generous layer of cottage cheese on each slice of toast.
  • Slice the soft-boiled eggs and place them on top of the cottage cheese.
  • Drizzle sriracha sauce over the eggs, and season with salt and pepper to taste.

Serving

  • Serve immediately and enjoy!

Notes

Storage: Keep leftovers in the refrigerator in an airtight container for up to 2 days. This dish is best enjoyed fresh, but you can freeze the cooked eggs (up to 3 months). Toast the bread and fresh toppings later.
