  • 1 cup cottage cheese Fresh or frozen (thawed)
  • 4 large eggs
  • 1/2 cup oat flour Can substitute with almond flour for keto
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • Butter or oil for cooking Use for greasing the skillet

Instructions
 

Preparation

  • In a mixing bowl, combine the cottage cheese, eggs, oat flour, vanilla extract, baking powder, and salt. Mix until well combined.
  • Heat a non-stick skillet over medium heat and add a little butter or oil.

Cooking

  • Pour batter onto the skillet to form pancakes.
  • Cook until bubbles form on the top, then flip and cook until golden brown on the other side.
  • Serve warm with your favorite toppings.

Notes

For extra flavor, add a sprinkle of cinnamon or nutmeg to the batter. You can also customize with blueberries, chocolate chips, or serve with whipped cream and cottage cheese.
