  • 1/2 cup honey Or maple syrup for a vegan option.
  • 1 teaspoon vanilla extract Pure vanilla for the best flavor.
  • 1/4 cup cornstarch To help set the cheesecake.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, blend the cottage cheese and Greek yogurt until smooth.
  • Add in the eggs, honey, and vanilla extract, and mix until well combined.
  • Gradually stir in the cornstarch until the mixture is smooth and creamy.
  • Pour the mixture into a greased springform pan.

Baking

  • Bake for 25-30 minutes or until set.
  • Let it cool, then refrigerate for at least 2 hours.

Serving

  • Before serving, top with fresh berries and drizzle with honey.

Notes

For extra flavors, consider adding a sprinkle of cinnamon or nutmeg to the batter. Serve chilled for the best texture and taste. This cheesecake can be made a day in advance for deeper flavors.
