  • 1 cup lentils (green or brown)
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 leaf bay leaf
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to taste Fresh spinach or kale (optional) Add at the end for extra greens.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add onions, carrots, and celery, and sauté until softened.
  • Stir in the garlic, turmeric, and cumin, and cook for another minute.

Cooking

  • Add the lentils, vegetable broth, and bay leaf. Bring to a boil.
  • Reduce heat and simmer for about 30 minutes or until lentils are tender.
  • Season with salt and pepper.
  • If using, stir in fresh spinach or kale until wilted before serving.

Serving

  • Serve warm in vibrant bowls.
  • Pair with fresh crusty bread or a simple salad.
  • Enjoy with a glass of herbal tea or white wine.
