  • 2 cups diced potatoes
  • 1 pound kielbasa, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream

Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sauté until soft and fragrant.
  • Stir in the sliced kielbasa and cook until browned, about 5-7 minutes.
  • Add the diced potatoes, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 20 minutes or until the potatoes are tender.
  • Stir in the heavy cream and adjust seasoning as needed. Heat through.
  • Serve hot, garnishing with fresh herbs if desired.

Notes

Add a splash of lemon juice for extra brightness. Serve with fresh bread or a grilled cheese sandwich for a comforting combo.
