  • In a large pot, melt the butter over medium heat. Add chopped onions and garlic, cooking until soft.
  • Add the chopped broccoli and vegetable broth. Bring the mixture to a boil.
  • Reduce heat, and let it simmer for about 15 minutes, or until the broccoli is tender.
  • Carefully blend the soup until smooth using an immersion blender or by transferring it to a regular blender.
  • Stir in the heavy cream and shredded cheddar cheese over low heat. Mix until the cheese has melted.
  • Season with salt and pepper to taste. Serve hot with crusty bread.
