Ingredients
  

For the Chicken

  • 2 pieces chicken breasts, cut in half lengthways
  • 1 tsp salt flakes
  • 1/4 tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/4 cup plain/all-purpose flour
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp garlic, freshly minced
  • 1/2 cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese
  • to taste Salt and pepper

For Serving

  • to serve Mashed potatoes, steamed rice, or pasta
  • to serve Steamed greens
  • 1 tbsp parsley, finely chopped for garnish
  • as needed Lemon wedges for serving

Instructions
 

Preparation

  • Season the chicken schnitzels with salt, pepper, paprika, onion powder, and thyme.
  • Dredge the seasoned chicken in flour.

Cooking

  • In a skillet, heat olive oil and 1 tbsp of butter over medium heat.
  • Cook the chicken schnitzels for about 4-5 minutes on each side until golden brown and cooked through.
  • For the sauce, melt the remaining butter in the same skillet, add minced garlic, and cook for 1 minute.
  • Stir in chicken stock, cream, Dijon mustard, and Parmesan cheese.
  • Season the sauce with salt and pepper, stirring until thickened.

Serving

  • Serve the schnitzels topped with the creamy sauce alongside mashed potatoes or steamed rice, and steamed greens.
  • Garnish with parsley and lemon wedges for extra flavor.

Notes

Add crushed red pepper for a spicy kick. Use chicken thighs for a juicier option. Pair with a light salad for added freshness.
