  • Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown on both sides (about 6-8 minutes total).
  • Remove the chicken and set aside.
  • In the same skillet, add chopped onions, garlic, and ginger, and cook until fragrant (about 2-3 minutes).
  • Add chopped bell peppers and tomatoes, then stir until softened (about 3-4 minutes).
  • Pour in the coconut milk and bring to a simmer.
  • Return the chicken to the skillet, cover, and let it cook in the sauce for about 15-20 minutes or until fully cooked.
  • Serve hot, garnished with fresh herbs if desired.

Notes
