  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (10.75 ounce) condensed cream of mushroom soup
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb gnocchi
  • 1/2 cup shredded cheddar cheese (optional) Can be added for a richer flavor.

Cooking Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and minced garlic; sauté until onion is translucent.
  • Add chicken cubes to the skillet; cook until browned on all sides.
  • Stir in condensed soup, heavy cream, milk, thyme, salt, and pepper.
  • Bring the mixture to a gentle simmer, stirring occasionally.
  • Cook gnocchi according to package instructions; drain.
  • Add cooked gnocchi to the skillet; stir to coat with sauce.
  • Top with cheddar cheese if desired, and allow it to melt.

Notes

Serve in shallow bowls with a crisp green salad or crusty bread. Excellent for sharing!
