  • 1 lb 3-4 boneless, skinless chicken breasts About 1 lb
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Cooking

  • In a large pot, add the chicken breasts and pour in the chicken broth. Cook over medium heat until the chicken is cooked through, about 15 minutes.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  • Add the cream cheese, garlic powder, onion powder, salt, and pepper. Stir until the cream cheese melts and combines well with the broth.
  • Next, add the gnocchi and spinach. Cook for about 3-4 minutes, or until the gnocchi is tender.
  • Sprinkle the shredded cheddar cheese and crispy bacon bits over the top. Stir well, and let it heat for a minute.
  • Serve warm and enjoy!

Notes

For added flavor, top with fresh herbs like parsley or a splash of lemon juice. Great as a meal prep dish and easily frozen for later.
