Ingredients
  

Vegetables

  • 2 cups cauliflower florets Fresh or frozen can be used.
  • 2 cups broccoli florets Fresh or frozen can be used.
  • 2 cups carrots, sliced Fresh or frozen can be used.

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk Use whole or low-fat milk.
  • 2 cups shredded cheese (such as cheddar) Feel free to use low-fat cheese.
  • to taste Salt and pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Topping (optional)

  • 1/2 cup breadcrumbs For added crunch on top.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Lightly steam the cauliflower, broccoli, and carrots until tender but still crisp (about 5-7 minutes).

Making the Cheese Sauce

  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, then gradually whisk in milk.
  • Continue to cook, stirring frequently, until the sauce thickens (about 5-7 minutes).
  • Add shredded cheese, salt, pepper, garlic powder, and onion powder to the sauce. Stir until melted and smooth.

Assembly and Baking

  • Combine the steamed vegetables with the cheese sauce and pour into a greased baking dish.
  • If desired, sprinkle breadcrumbs on top for added crunch.
  • Bake for 25-30 minutes, or until bubbling and golden.

Serving

  • Serve warm and enjoy!

Notes

Customize with other vegetables or cheese. For a spicy twist, add jalapeños. This casserole can be made ahead and stored.
