Ingredients
  

Main Ingredients

  • 2 pounds beef stew meat
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced

Liquid Ingredients

  • 4 cups beef broth
  • 2 tablespoons tomato paste

Seasonings

  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • to taste salt and pepper
  • 2 tablespoons olive oil for browning the beef

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat. Brown the beef stew meat on all sides (about 5-7 minutes).
  • Transfer the beef to a crockpot.
  • Add the chopped carrots, diced potatoes, chopped onion, and minced garlic to the crockpot.
  • In a separate bowl, mix the beef broth, tomato paste, thyme, salt, and pepper. Pour this mixture over the ingredients in the crockpot.
  • Add the bay leaf.

Cooking

  • Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
  • Remove the bay leaf before serving.

Notes

For extra flavor, add a splash of Worcestershire sauce or hot sauce while cooking. Customize by adding your favorite vegetables like green beans or peas. Serve with fresh herbs, like parsley, for a burst of color and freshness.
