Ingredients
  

Pastry and Filling

  • 1 sheet puff pastry Thawed if frozen
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup espresso or strong coffee, cooled
  • 1/2 tsp vanilla extract
  • 2 medium apples, peeled and sliced Ripe apples recommend
  • 1/2 tsp cinnamon
  • 1 tbsp butter For cooking apples
  • 1 egg for egg wash

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix cream cheese, powdered sugar, cooled espresso, and vanilla extract until smooth.
  • Roll out puff pastry on a floured surface and cut into squares.
  • Place a tablespoon of the cream cheese mixture in the center of each pastry square.
  • Fold the corners of the pastry over the filling to create a pocket.

Cooking

  • Arrange the sliced apples in a pan with butter and cinnamon, cooking until soft (about 5-7 minutes).
  • Place pastries on a baking sheet lined with parchment paper, brush with egg wash.
  • Bake for 15-20 minutes or until golden brown.

Serving

  • Serve warm, topped with cinnamon apples.

Notes

Dust with powdered sugar for presentation. Pair with whipped cream or ice cream for an extra treat.
