Ingredients
  

For the Mofongo

  • 3 pieces green plantains Peeled and sliced
  • 4 tablespoons butter Divided into two portions

For the Garlic Shrimp

  • 4 cloves garlic, minced Freshly minced garlic
  • 1 pound shrimp, peeled and deveined Fresh or thawed frozen shrimp
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste
  • 1/4 cup chicken broth For flavor
  • as needed garnish chopped cilantro For garnish

Instructions
 

Preparation of Plantains

  • Peel and slice the green plantains. In a pot of boiling water, cook the plantains until soft, about 15-20 minutes.

Cooking the Shrimp

  • In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  • Add shrimp to the skillet, season with salt and pepper, and cook until shrimp are pink and cooked through, about 3-4 minutes. Stir in the chicken broth and allow it to reduce slightly.

Mashing the Plantains

  • Drain the plantains and mash them with the remaining butter until smooth, about 2-3 minutes.
  • Form the mashed plantains into a bowl shape on a plate.

Serving

  • Fill the plantain bowl with the garlic shrimp mixture and garnish with chopped cilantro. Serve immediately.

Notes

Enhance flavor with lime juice or chili flakes. Customize by adding vegetables like bell peppers or onions.
