Ingredients

For the Cake

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups vegetable oil
  • 3 eggs
  • 1 tablespoon vanilla extract plus 1 teaspoon
  • 1 teaspoon white vinegar
  • 1 cup buttermilk
  • 1 tablespoon green food coloring

For the Cream Cheese Frosting

  • 3/4 cup unsalted butter at room temperature
  • 8 ounces cream cheese at room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 to 4 1/2 cups powdered sugar
  • 1 to 2 tablespoons milk or heavy cream if necessary
  • Green sprinkles for decorating if desired

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
  • In a large bowl, mix together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In another bowl, whisk together the sugar, vegetable oil, and eggs until smooth.
  • Stir in the vanilla extract, vinegar, and buttermilk until well combined.
  • Gradually add the dry ingredients to the wet ingredients until just combined. Add the green food coloring and mix until you achieve your desired color.
  • Pour the batter evenly into the prepared cake pans.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • While the cakes cool, prepare the cream cheese frosting by beating together the butter and cream cheese until smooth.
  • Add the vanilla, salt, and powdered sugar gradually until well combined. If the frosting is too thick, add milk or cream slowly until you reach your desired consistency.

Assembly

  • Once the cakes are completely cool, frost the top of one layer, then stack the second layer on top and frost the top and sides.
  • Add green sprinkles if desired.

Notes

For enhanced flavor, add a teaspoon of almond extract to the batter. Customize the color by adjusting the amount of green food coloring. Serve with a side of whipped cream for an extra creamy delight.
