Ingredients
  

Main Ingredients

  • 2 pieces Chicken breast Boneless, skinless
  • 2 cups Sweet potatoes Diced into cubes
  • 2 cups Broccoli Steamed until tender
  • 1 cup Rice Cooked according to package instructions
  • 1/4 cup Chipotle sauce
  • 1 pieces Avocado Sliced

Seasoning

  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Dice the sweet potatoes into cubes and toss them in olive oil, salt, pepper, garlic powder, and onion powder.
  • Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes until golden and crispy.
  • While the sweet potatoes are cooking, cook the rice according to package instructions.

Cooking

  • In a skillet, cook the chicken breast over medium heat until no longer pink, about 6-7 minutes per side. Drizzle with chipotle sauce during the last minute.
  • Steam the broccoli until tender, about 5-7 minutes.

Assembly

  • Assemble your bowl: Start with a base of rice, add roasted sweet potatoes, sliced chicken, steamed broccoli, and finish with avocado on top. Drizzle with extra chipotle sauce if desired.

Notes

Keep leftovers in an airtight container in the refrigerator for up to 3 days. Store in freezer-safe containers for up to 2 months.
