  • 2 packs Ramen noodles Choose your favorite brand.
  • 4 tablespoons Soy sauce Adjust to taste.
  • 4 cups Broth (chicken or vegetable) Use homemade or store-bought.
  • 2 stalks Green onions Chopped for topping.
  • 2 large Eggs Soft-boiled for garnish.

Vegetables

  • 1 cup Mixed vegetables (carrots, mushrooms, etc.) Chopped into bite-sized pieces.

Optional Toppings

  • 2 tablespoons Sesame seeds For garnish.
  • 1 sheet Nori Cut into strips for topping.

Preparation

  • Start by bringing your broth to a simmer in a pot.
  • While the broth heats, cook the ramen noodles according to the package instructions.
  • In a separate pot, boil water and gently add the eggs. Cook for 6-7 minutes for a soft yolk.
  • Chop your mixed vegetables into bite-sized pieces.

Assembly

  • Once the noodles are done, drain them and place them in a bowl.
  • Add the simmering broth over the noodles.
  • Top your ramen with cooked vegetables, sliced green onions, and halved eggs.
  • Finish with a drizzle of soy sauce and any optional toppings you like.

Notes

To enhance the flavors, serve with additional soy sauce on the side. For a spicy kick, add a splash of chili oil. Customize with your favorite proteins such as tofu or chicken.
