Ingredients
  

For the Chicken

  • 1 lb chicken thighs (boneless skinless, cut into 2” pieces)
  • 1 tbsp cornstarch
  • 1 tbsp flour (gluten-free option available)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 cloves garlic (sliced thinly)
  • 1 tbsp avocado oil
  • 1/4 cup honey
  • 4 tbsp cold unsalted butter
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp rice vinegar
  • Finely chopped parsley (for garnish)

Preparation

  • In a bowl, mix cornstarch, flour, salt, pepper, and garlic powder. Coat the chicken pieces in the mixture.

Cooking

  • Heat avocado oil in a skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add sliced garlic and cook until fragrant. Stir in honey, butter, soy sauce, and rice vinegar until smooth.
  • Return the chicken to the skillet and coat it with the honey butter sauce. Cook for an additional 2-3 minutes to heat through.
  • Remove from heat, garnish with parsley, and serve hot.

Notes

You can customize this recipe by adding spices like paprika or cayenne for a spicy kick, or substitute chicken with tofu or shrimp for variety. Serve with rice, mashed potatoes, or steamed veggies.
