  • 2 pounds chicken wings
  • 3 tablespoons potato starch
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon paprika
  • Oil spray For coating.

Sauce Ingredients

  • ½ cup honey
  • 1 lemon zested
  • ¼ cup lemon juice More can be added to taste.
  • 1 tablespoon minced garlic
  • 1 tablespoon butter
  • 1-2 teaspoons ground pepper Adjust based on heat preference.
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat your oven to 450°F (232°C).
  • Pat dry the chicken wings with a paper towel if they are moist.
  • In a large bowl, combine the potato starch, baking powder, garlic powder, onion powder, and paprika with the chicken wings and toss to coat.

Cooking

  • Lightly spray oil onto a parchment-lined sheet pan and place the coated wings in a single layer, spraying the tops with more oil.
  • Lower the oven temperature to 425°F (218°C) and bake the wings for 35 to 40 minutes, flipping halfway through and spraying additional oil on top.
  • Meanwhile, combine honey, lemon juice, lemon zest, minced garlic, butter, salt, and pepper in a small saucepan over medium heat; stir and simmer for 3 to 5 minutes until blended.
  • Save some sauce for dipping, then toss the baked wings in the honey lemon pepper sauce before serving.

Notes

For a spicy kick, add a dash of cayenne pepper. You can customize by substituting honey with maple syrup.
