Ingredients

  • 4 cups water
  • 3-4 pounds corned beef brisket + spice packet
  • 1 large yellow onion (cut into quarters)
  • 1-2 pieces russet potatoes (cut into 1 inch chunks)
  • 6 medium carrots (peeled and cut into uniform 1-2 inch chunks)
  • 1 head cabbage (cut in half, remove core, cut into medium-sized wedges)

Instructions
 

Preparation

  • Pour 4 cups of water into the Instant Pot.
  • Place the corned beef brisket in the pot and sprinkle the spice packet over it.
  • Add the quartered onion, then arrange the potato chunks and carrot pieces around the meat.

Cooking

  • Secure the lid, making sure the vent is closed, and set the Instant Pot to high pressure for 60 minutes.
  • Once cooking is complete, use a quick release to release the pressure.
  • Open the lid and carefully add the cabbage wedges on top of the vegetables.
  • Secure the lid once again, and cook for an additional 10 minutes on high pressure.
  • After the time is up, perform another quick release to enjoy your corned beef and cabbage.

Notes

Add a splash of apple cider vinegar to enhance the flavor and customize with additional vegetables like parsnips or turnips if you like. Serve with crusty bread to soak up the delicious juices.
