  • 2 large eggs Room temperature
  • 1 tsp vanilla extract
  • 0.5 cups sour cream
  • 1 cups crushed pineapple, well-drained Ensure it's well-drained before using

Glaze Ingredients

  • 0.5 cups icing sugar
  • 2 tbsp pineapple juice

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs one at a time and add vanilla extract.
  • Fold in sour cream.
  • Gradually mix in the dry ingredients until just combined, then fold in the crushed pineapple.

Baking

  • Pour the batter into the prepared pan and bake for 30-35 minutes.

Glazing

  • In a bowl, mix icing sugar and pineapple juice.

Notes
