Ingredients
  

Beans and Broth

  • 1 cup Dried red beans Soaked overnight in water.
  • 4 cups Chicken or vegetable broth Used to cook the beans.

Sausage and Aromatics

  • 1 lb Smoked sausage or andouille sausage Cut into slices.
  • 1 cup Onion (diced)
  • 1 cup Green bell pepper (diced)
  • 1 cup Celery (diced)
  • 4 cloves Garlic (minced)

Spices and Seasoning

  • 1 tbsp Creole seasoning
  • 1/4 tsp Cayenne pepper (optional) Adjust according to desired spiciness.
  • 2 leaves Bay leaves Remove before serving.

Serving Ingredients

  • 3 cups Cooked white rice
  • 1/2 cup Green onions (chopped) For garnish.
  • 1/4 cup Fresh parsley (chopped) For garnish.

Instructions
 

Preparation

  • Soak the dried red beans overnight in water.

Cooking

  • In a large pot, heat some oil over medium heat. Add the diced onion, green bell pepper, celery, and garlic. Sauté until softened.
  • Add the smoked sausage to the pot and cook until browned.
  • Drain the soaked beans and add them to the pot, along with Creole seasoning, cayenne pepper (if using), and bay leaves.
  • Pour in the chicken or vegetable broth and bring to a boil.
  • Reduce the heat, cover, and simmer for about 1 hour, stirring occasionally.
  • Once the beans are tender, remove the bay leaves and serve them over cooked white rice, garnished with chopped green onions and parsley.

Notes

For enhanced flavor, let the dish sit for a few hours or overnight to allow the flavors to meld. Customize with different meats like chicken or ham for varied tastes. Consider serving with a side of hot sauce for those who enjoy a little extra kick.
