Ingredients
  

Main Ingredients

  • 2 cups cooked rice Use day-old rice for best texture.
  • 1/2 cup onion, diced
  • 1/2 cup mixed vegetables (carrots, peas, etc.) Any preferred combination of vegetables.
  • 2-4 pieces eggs Use 2 for thinner omelet, 4 for thicker.
  • 2 tablespoons ketchup For drizzling on top.
  • to taste Salt and pepper Adjust seasoning to preference.
  • as needed Oil for frying Use vegetable or canola oil.
  • optional demi-glace for topping Add for extra flavor.

Preparation

  • In a pan, heat oil over medium heat and sauté the onion until translucent (about 3-4 minutes).
  • Add the mixed vegetables and cooked rice, stir-frying until heated through (about 5 minutes). Season with salt and pepper.
  • In a separate bowl, beat the eggs and season them lightly.

Cooking

  • Heat a non-stick skillet and add oil. Pour in the beaten eggs, swirling to cover the bottom of the pan (about 3 minutes).
  • Once the eggs are set but still soft, add the rice mixture in the center of the omelet.
  • Gently fold the omelet over the rice and slide it onto a plate.
  • Drizzle with ketchup or demi-glace before serving.

Notes

For an extra flavor kick, add a pinch of garlic powder. Customize with your favorite proteins or serve with a sprinkle of fresh herbs for garnish.
