Chicken and Coating

  • 4 pieces thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese for coating

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan for sauce
  • to taste Salt & pepper
  • for garnish Fresh parsley or thyme

Preparation

  • Preheat your oven to 400°F (200°C).
  • Set up a breading station: Place the flour, beaten eggs, and mixed breadcrumbs with grated Parmesan in separate shallow dishes.
  • Season the chicken cutlets with salt and pepper.
  • Dip each cutlet in flour, then into the beaten eggs, and finally coat with breadcrumbs.

Cooking

  • Heat olive oil and butter in a large skillet over medium heat. Cook the chicken for about 4-5 minutes on each side until golden brown.
  • Meanwhile, in a separate saucepan, sauté minced garlic until fragrant.
  • Add chicken broth and heavy cream, stirring well. Bring to a simmer and add grated Parmesan. Continue stirring until the sauce thickens.
  • Once the chicken is done, transfer it to a baking dish and pour the creamy garlic sauce on top.
  • Bake in the oven for 10 minutes to meld the flavors.
  • Garnish with fresh parsley or thyme before serving.

Notes

Enhance flavors by marinating the chicken in Italian herbs before breading. Customize the sauce by adding sautéed mushrooms or fresh spinach. Serve with crusty bread to soak up the delicious garlic sauce.
