  • 1 unit Egg Bring it to room temperature before using.
  • 1/2 tsp Vanilla Extract Ensure to measure carefully for the best flavor balance.

For the Filling

  • 1 cup Unsalted Butter Let it soften before mixing.
  • 4 cups Powdered Sugar Gradually mix it into the butter for a smooth, fluffy filling.
  • 2 tbsp Milk You can use almond milk or oat milk if you're avoiding dairy.
  • 1 tsp Vanilla Extract Opt for a different extract for a unique twist.

Instructions
 

Baking

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking soda, and baking powder.
  • In a separate larger bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry mix into the wet ingredients, mixing well after each addition.
  • Separate the dough into portions, and add gel food coloring to achieve your pastel shades.
  • Scoop tablespoons of dough onto parchment-lined baking sheets, spacing them out. Bake for 10-12 minutes, or until the edges are lightly golden.
  • Cool the cookies on the sheets for a few minutes before transferring to wire racks.
  • In a bowl, beat together the butter, powdered sugar, milk, and vanilla extract until fluffy to create your filling.
  • Once the cookies are fully cooled, spread a generous layer of frosting on the bottom of one cookie and top it with another.
