Ingredients
  

For the Potatoes

  • 4 medium russet or Yukon Gold potatoes, diced (approx. 3 cups)
  • 2 tablespoons olive oil or vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (optional, for added heat)
  • Salt and black pepper, to taste

For the Eggs

  • 6 large eggs
  • 1/4 cup milk (optional, for making eggs creamier)
  • 1 tablespoon unsalted butter or oil (for cooking the eggs)
  • 1 cup shredded cheddar cheese (or preferred cheese blend)

For Assembly

  • 8 small flour tortillas (or corn tortillas)
  • Salsa or pico de gallo
  • Sliced avocado or guacamole
  • Chopped fresh cilantro
  • Hot sauce
  • Cooked bacon or sausage crumbles (optional)
  • Diced tomatoes

Instructions
 

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced potatoes and season with garlic powder, smoked paprika, chili powder, salt, and pepper. Cook for about 15-18 minutes, stirring occasionally, until they are golden and crispy.

Cooking

  • In a bowl, whisk together the eggs and milk.
  • In a separate pan, melt the butter over medium heat.
  • Pour in the egg mixture and cook, gently stirring, until the eggs are soft and fluffy (about 3-5 minutes). Remove from heat and stir in shredded cheese until melted.

Assembly

  • While the eggs finish cooking, warm the tortillas in a dry skillet for about 30 seconds on each side, or until pliable.
  • On each tortilla, place some crispy potatoes, followed by a generous portion of the cheesy eggs. Top with your choice of salsa, avocado, cilantro, or any other desired toppings.

Serving

  • Roll up the tortillas and enjoy your delicious breakfast tacos while they are warm!

Notes

For added flavor, try adding sautéed onions or peppers to the potato mixture. Customize with different cheeses such as pepper jack or feta for a fresh twist.
