  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded divided
  • 6 slices bacon, cooked and crumbled

Seasoning and Garnish

  • to taste salt
  • to taste pepper
  • as desired chives or green onions for garnish

Instructions
 

Preparation

  • In a large pot, sauté the chopped onion until translucent.
  • Add the diced potatoes and broth to the pot.
  • Bring to a boil and then simmer until the potatoes are tender, about 15-20 minutes.
  • Once the potatoes are tender, use a potato masher to mash some of the potatoes for a creamy texture.
  • Stir in the heavy cream and half of the cheddar cheese, mixing until the cheese melts.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, topped with crumbled bacon, remaining cheddar cheese, and chives or green onions.

Notes

For extra flavor, add garlic while sautéing the onions. Customize by adding your favorite veggies or meats for variation. Serve with a sprinkle of extra cheese or crispy croutons for a tasty crunch.
