Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix olive oil, garlic, lemon juice, salt, and pepper.
  • Rub the mixture all over the whole chicken and place it in a roasting pan.
  • Arrange the chopped carrots, potatoes, onions, and squash around the chicken.
  • Sprinkle fresh herbs over the vegetables and chicken.

Cooking

  • Roast in the preheated oven for 1 hour and 15 minutes, or until the chicken is golden brown and juices run clear.
  • Let it rest for 10 minutes before carving. Serve with the roasted vegetables.
