Ingredients
  

Pasta and Main Ingredients

  • 1 box (16 oz) rotini noodles
  • 2 cups chopped small dill pickles
  • 8 oz colby jack cheese, diced
  • 1 small white onion, minced

Dressings and Seasonings

  • 1/3 cup brine from dill pickles
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Preparation

  • Cook the rotini noodles according to package instructions. Drain and let cool.
  • In a large bowl, combine the chopped dill pickles, diced colby jack cheese, and minced onion.
  • In a separate bowl, mix together the brine, mayonnaise, sour cream, fresh dill, salt, and pepper until well blended.
  • Add the cooled noodles to the pickle mixture and pour the dressing over it. Stir to combine all ingredients evenly.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Add a squeeze of lemon juice for extra zest. Feel free to swap in your favorite cheese or add diced peppers. This salad is great for sharing at potlucks or large gatherings.
