  • 4 medium potatoes, peeled and diced Use fresh potatoes for best flavor.
  • 2 leeks, white and light green parts only, cleaned and sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth Can use low-sodium if preferred.
  • 2 tablespoons olive oil For sautéing the leeks.
  • to taste salt and pepper Adjust according to personal preference.
  • as needed fresh herbs for garnish (optional) Such as parsley or chives.

  • In a large pot, heat the olive oil over medium heat for 2-3 minutes.
  • Add the sliced leeks and sauté until soft, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the diced potatoes and vegetable broth, bringing the mixture to a boil for 5-7 minutes.
  • Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh herbs if desired.

Notes

Enhance flavor with a squeeze of lemon or cayenne. Customize by adding a splash of cream or different herbs. Serve with garlic bread or croutons for a crunch.
