  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1.5 cups whole milk
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese

Spices and Seasoning

  • to taste garlic powder
  • to taste onion powder
  • to taste smoked paprika
  • to taste salt
  • to taste pepper

Preparation

  • Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

Cooking

  • Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown. Remove from the skillet.
  • In a saucepan, boil chicken broth with a pinch of salt, add the rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
  • In the same skillet, melt butter over medium heat, whisk in flour to form a roux. Gradually add milk while whisking until smooth.
  • Stir in spices and cheeses until melted.
  • Return the chicken to the skillet, spoon sauce over it, and serve hot over the rice.

Notes

Serve with steamed vegetables or a fresh salad for balance. For a spicier version, mix in cayenne pepper or hot sauce.
