  • 2 cups chicken broth

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat.
  • Add the chicken breasts and sear on both sides until golden brown, about 5 minutes each side.
  • Remove the chicken and set aside.
  • In the same skillet, add the rice and stir for 1-2 minutes.
  • Pour in the chicken broth and bring it to a simmer.
  • Stir in the milk, and then add the cheddar and Parmesan cheese until melted.
  • Return the chicken to the skillet, ensuring it is nestled in the creamy mixture.

Cooking

  • Cover the skillet and place it in the preheated oven.
  • Bake for 25-30 minutes until the chicken is fully cooked and the rice is tender.

Notes

Use fresh herbs like basil or parsley for an extra burst of flavor. Add vegetables like peas or spinach for added nutrition and color. Serve with crusty bread for mopping up that creamy sauce!
