  • 2 cups Grilled chicken, sliced Cooked and sliced before adding to the salad
  • 1 can Black beans, drained and rinsed
  • 1 cup Sweet corn Fresh or frozen and thawed
  • 4 cups Romaine lettuce, chopped
  • 1 large Avocado, diced
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Chipotle-lime dressing For drizzling over the salad

Instructions
 

Preparation

  • Grill the chicken and slice it.
  • In a large bowl, combine black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  • Add the grilled chicken on top.
  • Drizzle with smoky chipotle-lime dressing.
  • Toss gently and serve.

Notes

Store leftovers in the refrigerator for up to 3 days in an airtight container. You can freeze grilled chicken separately for up to 2 months, though freezing salad is not recommended.
