  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas or wraps
  • 1/2 cup ranch dressing or salsa

Preparation

  • In a large bowl, combine the shredded chicken, black beans, corn, and diced red bell pepper. Mix well.
  • Season the mixture with salt and pepper according to your taste.
  • Lay out the tortillas on a flat surface.
  • Divide the chicken mixture evenly among the tortillas.
  • Top with sliced avocado and shredded cheese.
  • Drizzle ranch dressing or salsa over the filling.
  • Roll up each tortilla tightly, folding in the sides as you go.
  • Slice each wrap in half, if desired, and enjoy!
