Ingredients
  

Main Ingredients

  • 2 cups spinach leaves (fresh or frozen) Fresh or frozen works well.
  • 1 can artichoke hearts Drained.
  • 2 pieces chicken breasts or thighs Skinless for leaner option.
  • 1/2 cup cream cheese or Greek yogurt Soften cream cheese before use.
  • 1/4 cup Parmesan cheese Grated.
  • 2 cloves garlic (minced)
  • 1 small onion (diced)

Seasonings

  • 1 tsp oregano Dried.
  • 1 tsp thyme Dried.
  • 1 tsp paprika

Oils

  • 2 tbsp olive oil

Optional Toppings

  • almond flour or coconut flour For topping.
  • Nutritional yeast Optional for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, heat 2 tablespoons of olive oil. Add the diced chicken and cook for approximately 5-7 minutes or until it turns golden brown.
  • Add 1 small diced onion and 2 minced cloves of garlic to the skillet. Cook for another 3-4 minutes or until the onion is soft and translucent.
  • Stir in 2 cups of spinach leaves and 1 can of drained artichoke hearts. Cook until spinach is wilted, about 2-3 minutes.
  • In a large mixing bowl, blend the cooked chicken mixture with 1/2 cup of cream cheese, 1/4 cup of Parmesan cheese, and your spices (1 tsp each of oregano, thyme, and paprika). Mix until well combined.
  • Pour the mixture into a greased baking dish. If desired, top with almond flour or coconut flour for a crunchy topping.
  • Place the dish in the preheated oven and bake for 25-30 minutes until bubbly and golden on top.

Notes

Customize by adding sun-dried tomatoes or olives, or serving with a yogurt dip.
